baby arugula salad with grapefruit & avocado

Serves 6 as a side salad

I love the creaminess of avocado combined with the bright flavors of grapefruit and tender baby arugula. This salad would also work well with baby spinach.

  • 6-ounce package baby arugula
  • 1/2 cup fresh or canned grapefruit sections, cut into small pieces
  • 1 Hass avocado
  • 1 lemon, halved
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper

Rinse and dry the arugula and place it in a large bowl. Add the grapefruit pieces. Peel, pit, and cut the avocado into 1-inch chunks. Squeeze a little lemon juice on it to keep it from browning. Drizzle the olive oil and squeeze more lemon juice over the salad. Add salt and pepper and toss.
