seasonal fruit salad with fresh mint

Serves 6
This can be a great dish year-round, if you choose the best fruits available. The addition of mint adds an unexpected, refreshing complement to the sweetness of the fruits.

  • 1½ cups strawberries, cleaned and quartered
  • ¾ cup fresh pineapple chunks
  • 1 cup apples, cored and cut into chunks
  • 1 pint blackberries, cleaned
  • ¼ cup finely chopped mint

In a mixing bowl, combine the cut fruit and toss. Add the fresh mint and stir gently. Serve in parfait dishes or small bowls.
