caramelized cinnamon banana bites

Serves 8 as a small dessert
These remind me of sweet plantains. I like to spoon them over vanilla ice cream while they are still warm, but they’re great all by themselves. Be mindful that caramelized sugar gets very hot, so use caution while stirring and spooning the hot bananas.

  • 6 tablespoons (¾ stick) butter
  • 4 ripe bananas
  • 1 teaspoon ground cinnamon
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 teaspoons confectioners’ sugar

In the microwave, melt 4 tablespoons of the butter. Peel the bananas, slice them into small rounds, and toss them with the melted butter. In a large bowl, combine the cinnamon, granulated sugar, and brown sugar. Add the banana slices and coat them with the dry mixture. In a wide skillet, heat the remaining 2 tablespoons butter and add the bananas. Let them sauté until golden on one side, then turn them and cook until they are golden and caramelized on the other side.

When you’re ready to serve dessert, sprinkle the bananas with the confectioners’ sugar.
