quick cranberry corn muffins
This recipe combines store-bought muffin mix with a few ingredients to make the muffins feel homemade. Their small size makes them perfect for a party.
- 1 package corn-muffin mix
- 1⁄2 cup canned or fresh sweet corn
- 1⁄4 cup dried cranberries, plus 2 tablespoons
Prepare muffin batter according to instructions, undermixing slightly. Add in corn and 1⁄4 cup cranberries, and combine. Batter should still be slightly lumpy (overbeating makes muffins tough).
Pour batter into greased muffin tins. Add a few cranberries on top for garnish. Serve warm or at room temperature.
