gruyère-stuffed dinner rolls

If you don’t have gruyère, you can use cheddar, goat cheese, or any cheese you like. Also, feel free to add olives, roasted peppers, or crispy bacon. . . . Use your imagination! (The photo to the right shows the rolls with olives and roasted peppers.)

  • 8 dinner rolls (sourdough or whole grain)
  • 4 tablespoons extra-virgin olive oil
  • 3⁄4 cup shredded gruyère cheese
  • 1⁄4 cup grated Parmesan
  • Salt
  • 2 tablespoons fresh parsley, chopped

Preheat oven to 400°F. Make two cuts halfway through each roll to form an X. Drizzle the inside of each roll with olive oil. Stuff the gruyère inside the roll. Sprinkle with Parmesan cheese, a pinch of salt, and parsley. Bake for 3–5 minutes, until cheese is melted and light golden brown. Serve warm.
