garlic-kick mashed sweet potatoes

Serves 6–8

This sweet and savory side dish is healthy and comforting. The garlic cloves cook with the sweet potatoes, and if you wait until they’re cooked to peel the potatoes, you’ll find the skins come off as easy as pie.

  • 3 pounds sweet potatoes
  • 3 garlic cloves, peeled
  • 1 teaspoon nutmeg
  • 2 tablespoons butter
  • 3⁄4 cup evaporated milk
  • Salt and pepper

Quarter the sweet potatoes. Place them in a heavy stockpot full of cold water. Add the peeled garlic cloves and bring to a boil over high heat. Continue cooking approximately 15–20 minutes, or until tender.

Drain and peel the potatoes, reserving the garlic.

In a mixing bowl, combine the sweet potatoes and garlic. Add the nutmeg, butter, and evaporated milk, and season with salt and pepper. Mix in an electric mixer until mashed.
