stewed okra, peas & tomatoes

Serves 6 as a side dish
This stewed vegetarian dish makes a wonderful accompaniment to any meal, but it can also be a meal in itself, served with couscous and salad. You can keep this dish in the fridge for a day or two.

  • 2 tablespoons butter
  • ½ cup chopped yellow onion
  • 8 ounces tomato paste
  • ¾ cup chopped fresh okra
  • 1½ cups chopped fresh tomatoes
  • 2 cups fresh organic peas (or frozen peas)
  • ¼ cup finely chopped green chilis
  • 1 teaspoon garlic powder
  • ½ teaspoon ground coriander
  • Salt and pepper

In a sauté pan, heat the butter over medium heat. Add the onion and cook until translucent. Add the tomato paste and stir. Add the okra, tomatoes, peas, chilis, garlic powder, and coriander. Stir, season with salt and pepper, and simmer for 10 minutes, stirring occasionally. The vegetables should be soft but not mushy.
